Meet The Chef

We’re delighted to welcome Nicola Ducceschi as Head Chef at Metropolitan Mayfair.

Born in Pistoia, near Florence, Nicola’s passion for cooking began early, shaped by time in the kitchen with his mother and grounded in traditional Italian techniques. He trained at the Institute for Professional Development in Hotel Management and Culinary Arts in Montecatini Terme, building a strong foundation in classical cuisine.

His career has taken him from renowned hotels and private residences across Italy to London, where he worked at The Dorchester and the Michelin-starred Chez Bruce in Wandsworth. He has also gained international experience in Beirut, before leading the kitchen at the award-winning Italian restaurant Tentazioni.

A year in Bali further broadened his expertise, introducing Asian flavours and techniques that continue to influence his approach. He returned to London in 2003 to take on the role of Head Chef at The Metropolitan Hotel on Park Lane, where he spent eight successful years, before joining Crown Aspinalls as Executive Chef.

Nicola’s style is confident and considered, blending innovation with a strong Italian foundation. With a focus on high-quality, locally sourced ingredients, his menus bring together refined technique and authentic flavour, delivering a dining experience that is both elevated and true to its roots.
